Kitchen Manager

Position Summary

Fast growing restaurant concept located in San Diego is looking for a highly motivated, passionate and enthusiastic Kitchen Managers to join our dynamic team.

The Kitchen Manager is responsible for inspiring their team, developing their team and upholding Luna Grill’s High Standards. S/he will also be managing all kitchen functions including food purchasing, preparation and maintenance of quality standards; sanitation and cleanliness; training of Team members in methods of cooking, preparation, plate presentation, portion and cost control and ensuring equipment is properly maintained and in good condition as indicated in the training tools.

 

Essential Responsibilities

LEADERSHIP & TEAM DEVELOPMENT

Provides orientation of Luna Grill Standards, participates in training of new kitchen team members.

Works with General Manager and Training Department to ensure that BOH team members receive proper and required training for their position (including safety, cleanliness and sanitation practices).

Maintains courteous, professional and effective working relationships with Team Members and coworkers at all levels of the organization.

Works with the General Manager to ensure that restaurant standards on team member performance appraisals/ road to success journals are followed and completed on a timely basis.

Works with General Manager in making employment, corrective action and termination decisions as appropriate.

Maintains knowledge of Luna Grill standards regarding personnel and administer prompt, fair and consistent corrective action for any and all violations of Luna Grill standards.

Attends all schedule team member meetings/training and brings suggestions for improvements.

OPERATIONAL EXCELLENCE

Prepares all required paperwork, including forms, reports and schedules in an organized and timely manner.

Fills in where needed to ensure guest service standards and efficient operations.

Ensures that all food and products are consistently prepared and served according to the Luna Grill’s recipes, portioning, cooking and serving standards.

Ensures that all products are ordered according to predetermined product specifications and received in correct unit count and condition and deliveries are performed in accordance with the Luna Grill’s receiving standards.

Works with the General Manager to schedule labor as required by anticipated business activity while ensuring that all positions are filled when and as needed and labor cost

Check and maintain proper food holding and refrigeration temperature control points.

Ensures that safety and security standards are adhered to and that team members are properly trained in current position and knowledgeable of the company’s Safety Plan and Injury and Illness Prevention Program.

FINANCIAL MANAGEMENT AND ACCOUNTABILITY

Controls food cost and usage by following proper requisition of products from storage areas, product storage standards, standard recipes and waste control procedures.

Controls and maintains small ware inventory by making sure that the team knows how to take care of the equipment and orders replacement when necessary within the set budget.

Ensures that all equipment is kept clean and kept in excellent working condition through personal inspection and by following the Luna Grill’s preventative maintenance programs.

Responsible for maintaining appropriate cleaning schedules for kitchen floors, mats, walls, hoods, Grills, other equipment and food storage areas.

 

Knowledge, Skills and Abilities

Must represent Luna Grill’s 12 Characteristics as outlined in the Team Member Handbook.

Bi-lingual in English and Spanish required.

Posses and instill high quality standards for food quality, production and plate presentation.

Strong leadership and problem solving skills.

Detail oriented, organized and efficient.

Safety-minded.

Ability to work productively with little to no supervision.

Trustworthy and reliable.

Computer literate using Microsoft Office is preferred.

 

Education/Experience Required

Must have a minimum of one (1) year restaurant experience, similar restaurant management experience is preferred

Luna Grill experience is ideal.

High School Diploma or equivalent required.

 

Physical Demands/Work Environment

PHYSICAL DEMANDS: 

Frequent standing, walking, bending, bend and twist neck and waist, reach above and below shoulders and squat, use hands, reaching or grasping with hands and arms.

Must be able to lift up to 25 pounds on a regular basis and occasionally up to 50 pounds.

Must be able to work under pressure and be flexible to work long hours, irregular hours, including weekends and holidays.

WORKING ENVIRONMENT:

Must comply with Company’s Appearance and Dress Code standard as set forth in the Team Member Handbook.

Works primarily in the kitchen, where air may be moist, warm, and odorous from cooking foods.

Kitchen floors are uneven and may be slippery from moisture and grease.
