Assistant Kitchen Manager

Position Summary

Fast growing restaurant concept located in San Diego is looking for a highly motivated, passionate and enthusiastic Assistant Kitchen Managers to join our dynamic team.

The Assistant Kitchen Manager is responsible in assisting the Kitchen Manager in inspiring and providing leadership for all kitchen functions such as preparation and maintenance of quality standards, sanitation and cleanliness, training of employees in methods of cooking, preparation, plate presentation, portioning, food cost control; and ensuring equipment is properly maintained and in good condition.

 

Essential Responsibilities

LEADERSHIP & TEAM DEVELOPMENT

Assists Kitchen Manager with orientation of new hires regarding Luna Grill Standards.

Assists Kitchen Manger to ensure that restaurant standards on team member Road to Success Journals/Performance Appraisals are followed and completed on a timely basis.

Assists Kitchen Manager to ensure that kitchen personnel receive proper and required training for their position (including safety, cleanliness and sanitation practices).

Ensures that safety and security standards are adhered to and that team members are properly trained in current position and knowledgeable of the company’s Safety Plan and Injury and Illness Prevention Program.

Participates in making employment and corrective action decisions.

Maintains courteous, professional and effective working relationships with team members at all levels of the organization.

Attends all schedule team member meetings/training and brings suggestions for improvements.

Assists with duties of Kitchen Manager when absent.

OPERATIONAL EXCELLENCE

Ensures that all food and products are consistently prepared and served according to Luna Grill’s recipes, portioning, cooking and serving standards.

Oversee Luna Grill standards, health department policies and procedures, and participates in training of new kitchen team member in accordance with company standards.

Fills in where needed to ensure guest service standards and efficient operations.

Ensures that all equipment is kept clean and maintained in excellent working condition through personal inspection and by following the restaurant’s preventative maintenance programs.

Check and maintain proper food holding and refrigeration temperature control points.

FINANCIAL MANAGEMENT AND ACCOUNTABILITY

Ensures that all products are ordered according to predetermined product specifications and received in correct unit count and condition, and deliveries are performed in accordance with the restaurant’s receiving policies and procedures.

Controls food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures.

 

Knowledge, Skills and Abilities

Must represent Luna Grill’s 12 Characteristics as outlined in the Team Member Handbook.

Bi-lingual in English and Spanish preferred.

Posses and instill high quality standards for food quality, production and plate presentation.

Effective leadership and problem solving skills.

Detail oriented, organized and efficient.

Safety-minded.

Ability to work productively with minimal supervision.

Trustworthy and reliable.

 

Education/Experience Required

One (1) year restaurant experience required, similar restaurant supervisory experience is preferred

Luna Grill experience is ideal but will consider one-year restaurant management experience as equivalent.

Grill Certification is required.

 

Physical Demands/Work Environment

PHYSICAL DEMANDS: 

Stands/walks continuously (up to 5 hours) through the shift.

Frequent bending, bend and twist neck and waist, reach above and below shoulders and squat, use hands, reaching or grasping with hands and arms.

Must be able to lift up to 25 pounds on a regular basis and occasionally up to 50 pounds.

Must be able to work under pressure and be flexible to work long, sometimes irregular hours including weekends and holidays.

WORKING ENVIRONMENT:

Must comply with Company’s Appearance and Dress Code standard as set forth in the Team Member Handbook.

Works primarily in the kitchen, where air may be moist, warm, and odorous from cooking foods.

Kitchen floors are uneven and may be slippery from moisture and grease.
